The whole frozen tuna were transported to the cutting rooms by cart where they were into 4 quarter sections to be sold to lower level middle men that had specific orders from sushi and other restaurants. The frozen tuna were cut using specially designed stainless steel bandsaws.

Mass quantities of from tuna are on display on the floor of the tuna auction area of the Tsukiji Fish Market. The auction rooms were open to the public. I used to wander through the auction areas with a large format camera mounted on a tripod managing to stay out everyone's way while taking photographs. The auction areas, and the wholesale fish market staye open to the public until a really stupid tourist touched one of the tuna, causing the fish market management to ban tourists from the entire wholesale mart.
