I read about that Irish sodabread. But noone mentioned sourdough. On the contrary. It was often praised for being so simple (just baking-soda) without the need of this super-complicated SD-thing. :D

I was asking because I do not let the (refurbished) madre rise so much anymore before I put it to sleep in the fridge. It will double anyway. I just leave it some time to get started - like 2 hrs or so before.
