Like I have said before I am controversial, I don’t pre heat the oil or pan. They are fun and easy to make. Nice the next morning for breakfast with a little jam.

I do have a proper Yorkshire pudding tin. But I use and old muffin tin when there are a few of us.

I had a different recipe for years and then someone said equal measures so I tried it, like I do. Never gone back. My mum never told me her actual recipe. Even my Dad doesn’t know it. So was lost with her.

I love trying new recipes. Even old ones just done a different way. I am lucky my husband is quite happy with anything I put on the table. My son is the fussing one and my biggest critic.
Yorkshire puds are like a Victoria sponge. Equal weights of all ingredients. If I had filled this tray it would have been 5 eggs. It’s all about the eggs as my mum used to say.
My great uncles always took them home and had them with jam for breakfast. My son keeping up the tradition. He also makes great puddings, I love passing on recipes to him and anyone really. I have my own recipe bible 🤣
So this is 4 eggs. I crack them into a jug on the scales, weighing them. Adding the same in flour and then the same plus a little in milk. Salt and pepper. Mix until just combined, don’t over mix. Leave batter to stand for min 30 mins. Bake 200c fan for 25 mins approx.
Ours are growing in the greenhouse, but I wouldn’t put anything out in pots or borders until May. I am also wanting to do more in the garden. At moment generally tidying up . Nice to see the sun today and sit out with a coffee.
My mum made them with goose fat or lard. I still mix the batter and leave to stand for a couple of hours before baking like she did. Some say leave in fridge but I leave at room temp. My eggs are also always kept in the coolest part of house, but never in fridge.
They have all gone. Nothing gets left in this house 😅

I am controversial, I don’t warm my oil or tray before adding batter. Still have great results.
Thank you. My mum was the real pro at yorkshires. She used to make hers in roasting dishes. I can get a good 7inch cake size one.
