When I started screen recording web apps I always used to Cmd-Plus or CSS override "zoom".
A much better approach is to override the page zoom by host in Safari's preferences.

I used to use a nice product on the mac called Screenflow, which was simpler and cheaper than Camtasia while being much more "mac-like" in all the good ways, but it seems to have become zombie-ware.
