BAKED CARROT PUDDING
1½ cups all-purpose flour
½ cup shortening
1 teaspoon salt
1 cup light brown sugar, firmly packed
1¼ teaspoons cinnamon
¼ teaspoon cloves
½ Nutmeg
1 cup grated raw carrot,(4 medium-carrots)
2 teaspoons tartrate or calcium-phosphate baking powder OR
1½ teaspoons S.A.S.-phosphate baking powder
1½ cups finely chopped apple (3 medium-sized apples)
¾ cup seedless raisins
Sift flour, measure, and resift 3 times with salt, spices and baking powder. Cream shortening thoroughly and gradually blend in sugar. Add carrot, apple, and raisins and mix thoroughly. Add flour mixture slowly, mixing until well blended. Turn into buttered individual molds; bake in a moderately slow oven (325° F.) for 50 minutes, or steam for 1½ hours in covered molds. Serve hot with Lemon Sauce). 8 to 10 servings.
